Barb McDougall's Raw Apple Cake
- 2 cups raw apples, diced
- 1 egg, beaten
- 1/4 cup oil
- 1/4 tsp vanilla extract
- 1/4 tsp salt
- 1 cup sugar
- 1 cup flour
- 1 tsp cinnamon
- 1 tsp baking soda
Cube apples, stir in beaten egg.
Add oil, sugar, cinnamon and vanilla. Stir.
Add salt, flour and baking soda. Stir until well-mixed. Pour into greased loaf pan. Bake at 35 degrees until toothpick comes out clean, 50-55 minutes.
Note: Double recipe for 8x8 square pan and bake for 60-70 minutes.
(Can line pan with parchment paper instead of oil or crisco.
